No cheese? What is wrong with me???

Ready for some more food??  If you haven't gotten enough burger inspiration over the past few weeks, don't worry.  I've got two more for you!  Here's edition number three of:

And this one's a tasty one, too!  Totally different than I would normally try, so I'm glad I found this recipe.


The recipe.

Garlic Burger with Roasted Red Pepper and Avocado
1 lb ground beef
1/2 C minced onion
2 Garlic cloves, pressed
Montreal Steak Seasoning
2 Avocados
1 Red onion, sliced thin
1 Jar roasted red peppers
4 Large onion rolls

Mix together ground beef, minced onion and pressed garlic.  Pat into patties and sprinkle with Montreal Steak Seasoning.  Grill to your liking.  Place hamburger patties on an onion roll and top with red onion, lots of roasted red peppers, and avocado slices.

Reaction:
Yum!  Totally different than any other burger I've tasted.

Challenges?  Changes?  Suggestions?
No challenges; this was a very straightforward recipe.  I did NOT grill mine, but made them in a skillet.  See here for more info on that.  I did not use the red onion for my mom's sake - since she's allergic.  I grilled the rolls on the skillet before serving them.  I have decided this makes ALL THE DIFFERENCE in the WORLD.  

Overall Assessment:
Really unique, bold flavors that work well together.  Nothing is overpowering, it all blends well, and you don't even need cheese or mayo - and that's probably the first time I've ever said THAT.  

I did serve these with the normal hamburger toppings on the side:

Cheese, tomato, lettuce, sauteed onion and raw onion - so that everyone could decide if they wanted a more traditional take on a garlic burger.  I'm really glad I tried this the way the recipe recommended, though.

Don't you love a good fruit pizza in the summertime?  I wish I could eat ONLY this at mealtime.  Delicious.  BUT I have one caveat.  I do not like fruit pizza with a sugar cookie crust.  I know, I know.  Some of you are screaming "Blaspheme!" And maybe it's true.  But I simply can't help it.  My mom never used sugar cookie crust on hers when I was growing up and therefore, she ruined me.  Anyway, it was NOT easy to find a recipe online for a Fruit Pizza WITHOUT sugar cookie crust.  People like their sugar cookies, I guess.  BUT, I finally ended up taking a little bit of info from one, and some from another, and in the end I combined three recipes with some tweaks to make this:


Fruit Pizza
Crust:
8 tablespoons butter
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 tablespoon milk
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
Filling:
16 ounces cream cheese (softened)
1 teaspoon vanilla
1 cup powdered sugar




 I used strawberries, blueberries, and kiwis.  IT WAS GREAT!  The crust was nice and soft, and not too sweet.  The fruit was ripe and tasty and I love cream cheese filling on pretty much everything.  mr claimed it was a little too rich for his blood, but he’s in the land of dairy now - where we have a love affair with cream cheese (or any kind of cheese for that matter.)


Take these two recipes to your next cookout or picnic and you won't disappoint!
